Mom's Mexican Casserole My enjoyment for all things taco usually spills into what dinners I make at least once a week. This is the taco casserole I grew up on, the one my Mom always made. It has a crust made of Taco Flavored Doritos and it's full of seasoned ground beef and lots of cheese! You can have Mom's Mexican Casserole using 11 ingredients and 10 steps.   1. You need 2 lb of lean ground beef.
  2. It's 1 medium of onion, chopped.
  3. Prepare 2 packages of Taco seasoning.
  4. Prepare 1 can of rotel.
  5. You need 1 can of cream of onion soup.
  6. Prepare 1 can of cream of chicken with mushroom soup.
  7. You need 1 can of enchilada sauce.
  8. It's 12 of corn tortillas.
  9. It's 1 1/2 cup of crushed nacho cheese doritos.
  10. You need 1 1/2 cup of shredded monterey jack cheese.
  11. It's 2 cup of shredded sharp cheddar cheese.

This Taco Casserole is one that I remember growing up that my Mom would make from time to time. Mexican food is one of my favorites! I love a little spice to get me into a meal. Plus the salsa, beans, sour cream, chicken, cheese in this recipe are all enticing to me.

Mom's Mexican Casserole instructions

  1. Preheat oven to 350.
  2. Brown ground beef with onion.
  3. Add taco seàsoning, salt and pepper if needed as well.
  4. In a separate pan heat rotel, both soups, and enchilada sauce together until blended smoothly.
  5. In a 9X13 casserole dish, spray with non stick oil, lay six corn tortillas down on bottom of pan.
  6. Take half of the seasoned ground beef and spread on tortillas, then half of the sauce mixture on top of beef.
  7. Then add the other 6 tortillas, beef, and sauce again.
  8. Bake for 30min, then add your crushed doritos and cheddar and Monterey jack cheese, bake for another 15min until melted and bubbley.
  9. Spoon it out and top it off with some fresh tomatoes and sour cream.
