- Prepare 1 bunch of fresh chopped cilantro.
- Prepare 1/2 cup of shredded cheddar cheese.
- It's 2 cup of cooked brown rice.

- Cook rice & beans (if using dry) & set aside.
- Lightly grease 2 quart casserole, heat oven to 350°..
- Cook beef & onion until beef is no longer pink, add bell pepper & cook stirring for 2 minutes longer..
- Stir in all remaining ingredients except cheese. Spoon into casserole..
- Bake 25 minutes, top with shredded cheese, bake 5 minutes longer..
Loved the video, especially the background music. It made me want to grab a margarita and couple of tacos. Sprinkle with garlic, chili powder, salt and pepper. Rest assured, that's not the case with the Tex-Mex dish thanks to fresh cilantro, red bell pepper and a small-but-mighty packet of taco seasoning. We used ground beef but ground chicken or turkey would be just as good.
