Roll tortilla around filling; place seam side down on cheese in baking dish. Pour remaining hot and mild sauces over enchiladas. Transfer beef to colander to drain. Place a couple big spoonfuls of the beef mixture and a sprinkle of both cheeses down the middle of the tortilla. Roll up and place the enchiladas seam-side-down next to each other in the pan.
