- You need 6 of Corn tortillas cut in half.
- Prepare 1 can of Rotel w/green chilies undrained.

- Heat oven to 350.
- Brown meat. Drain.
- Stir in soup n 1 cup velveeta.
- Soon 1/3 meat mix into baking dish. Cover with 6 tortilla halfs and 1/4 cup rotel. Repeat layers.
- Top with remaining mix rotel and velveeta. Cover.
- Bake 25 mins.
Layer the beef mixture into the dish, followed by eggs poured over top. Sprinkle with olives & green onion if using, and transfer to the oven. Top with garnishes of your choice & serve hot! *Notes: With all of my baked egg dishes, I add a layer of parchment paper to the baking dish to keep everything from sticking.
